HACCP is the acronym for Hazard Analysis of Critical Control Points. This text, by Arduser and Brown is the be all and end all on the topic - in my view. It even comes with a companion CD-ROM that contains all forms from the book in Adobe Acrobat (PDF) and MS Word format. This is a major time saver when it comes to preparing and administering the required tests to staff members and the newly hired.
The comprehensive 530+ page text covers everything I can think of that relates to food safety in restaurants and other eateries. It is designed to teach food service managers and their employees the specifics of food safety in accordance with the FDA Food Code. This excellent training manual is in large print format that makes it easy to read. The writing is easy to understand and the authors were careful to explain key concepts and terms so that even a novice can study it alone.
The seven comprehensive chapters in the manual cover the following topics: Hazards to Food Safety; Factors Affecting Food-Born Illness; Food Safety Regulations; Following The Flow of Food; HACCP; and the Facility Plan. These are followed by an extremely helpful Glossary of terms. The Appendix includes all forms needed to meet the FDA requirements and to run an efficient and safe establishment. Included are checklists, signage, compliance checklists, and equipment cleaning charts, allergen-control program worksheet along with job descriptions for personnel. There is even a Certificate of Completion to certify that staff members have taken and passed the required tests (included).
With the rise in reports of food-borne illnesses and deaths it is essential that every food service operation adhere to the regulations and safety procedures at all times. In my view, this book is essential to ensure you are in total compliance.
As one who has conducted training I find this book deserves 5 stars for its complete coverage of the subject matter in an easy to digest all-in-one format. I highly recommend this book.

This book is only a book about psychology of technical staff. For this reason, maintenance managers should read this book without fail. But I do not recommend the book for non-native speaker because it's language is very heavy to comprehend. I should say that some section of the book is very complex.
Effectively Managing Maintenance Errors.......2006-05-11
The book "Managing Maintenance Error: A Practical Guide" is an excellent and enlightening book on avoiding and managing maintenance errors. James Reason is a well known authority on human factor issues and his seminal work entitled "Human Error" (1990) is widely used by practitioners that work in various hazardous industries.
Maintenance Error management seeks to prevent errors from occurring and eliminate or mitigate the bad effects of errors. The maintenance engineering industry should always strive towards ensuring that errors do not arise in the first place. However, it will never be possible to eliminate errors entirely. Therefore maintenance organisations should aim to manage errors.
Reason refers to the two components of error management namely error containment and error reduction. To prevent errors from occurring, it is necessary to predict where they are most likely to occur and then to put in place preventative measures. Within a maintenance organisation, data on errors, incidents and accidents should be captured with a Safety Management System, which should provide mechanisms for identifying potential weak spots and error-prone activities or situations. Output from this should guide local training, company procedures, the introduction of new defences, or the modification of existing defences.
Ultimately, maintenance organisations have to compromise between implementing measures to prevent, reduce or detect errors, and making a profit.
One of the things likely to be most effective in preventing error is to make sure that maintenance personnel follow procedures. This can be effected by ensuring that the procedures are correct and usable, that the means of presentation of the information is user friendly and appropriate to the task and context, that engineers are encouraged to follow procedures and not to cut corners.
This is a well written book in simple plain English that should make it easy to follow and understand. The book is very useful for people who work in the maintenance industry.

This book is well written with lots of documented examples to support the authors views. Its a ralatively easy read and is laid out in a logical format. I recommend this book to anyone in the maintenance field, and not just avaiation maintenance, who wishes to understand why errors are committed and who like to develop a plan to identify and reduce their occurance.

Health, safety and the environment are key driving factors in industry in the 21st Century. Monitoring of exposure to chemicals in the workplace and in emissions from factories is used to calculate exposure to possible chemical toxins including carcinogens. Other factors must also be considered in chemical monitoring, such as the actual risk of harm and possible areas of high exposure, such as when opening ovens or dealing with equipment problems, situations where a build up of chemical can occur in an enclosed environment.
Different types of monitoring equipment and ways of monitoring are available. For example, static monitoring can be carried out in one place over a period of time, or a recorder can be placed on an employee near to the breathing zone to measure individual exposure to chemicals. There are many factors which can lead to inaccurate interpretation of results from using equipment which does not distinguish between critical chemicals or which is not sufficiently sensitive, to not taking into account local factors such as employee's smoking habits.
To measure a chemical in air, it must first be trapped in some way and the trapped sample analysed. There are different methods of trapping from simple grab sampling of air to the use of filters, absorbents and adsorbents. The trapped sample must be analysed and a variety of methods are available. Chemicals present at low levels can still be toxic. The aim is to choose a method that is capable of measuring across the range of exposure levels of concern. Government bodies such as NIOSH and OSHA in the USA and the HSE in the UK have published approved methods for specific chemical species.
There are many chemicals in use in the rubber and plastics industries from the monomers polymerised to form plastics and rubbers, to the additives used to enhance the polymer properties. In addition, other potentially hazardous substances are formed by reactions between these base chemicals and with air. The formation of suspected carcinogenic nitrosamine compounds by some rubber formulations is a case in point.
This book examines the types of chemicals found in the polymer industry and the potential hazards. It goes on to explain the common chemical reactions of concern to health and safety. Monitoring methods are described in some detail together with their limitations. This is essentially a practical book giving a background to the chemistry of the polymer industry and chemical monitoring methods. It will be of use to workers and managers across the industry in explaining what should be done and why. It will be of particular interest to occupational health and environmental monitoring specialists.

As a school distict crisis-responder, I found this book to be most helpful. It is appropriate for both beginners and those experienced in crisis/emergency response. Don't wait for a crisis to happen before you read this book.
