Essential of Food Safety & Sanitation.......2001-10-18
I am using your textbook for a class I teach for the Oklahoma City/County Health Department. I Love It! The class I teach is the Food Service Operator's Certification Course that is required by all food service operators in this county. I am a Registered Dietitian who is contracted by Oklahoma State University-OKC and Francis Tuttle to teach the class for the health department. It is kind of a community service offered by the two schools. I have only been teaching the class for three years now, and by far your book is the best.
Your book has made my job so easy and so much fun! Some of my students are returning to do the re-certification class and bringing managers in who have not taken the class in 20 years. In the past, they have just challenged the test every three years, because they thought the class was too boring. (and they knew it all).
I would highly recommend this book to educators in the nutrition field. I think all nutrition majors need to know this important information. I also recommend it for a reference for my food service managers in my nursing homes and assisted living facilities.
Meets the training needs for Food Handlers.......2001-05-17
As an instructor who teaches Food Safety classes to front-line employees, I find this text an excellent resource. It is comprehensive yet still easy-to-understand, a difficult combination to achieve for some of the technical aspects of foodborne illness, pathogens, etc. The cartoon-style drawings add to the enjoyment. I have had many trainees who share these positive comments. Only negative comment would be to include color photos instead of the old, grainy B&W.

Essentials of Food Safety & Sanitation is a comprehensive, easy-to-understand guide to help food workers produce safe food. In my job as editor of a food safety-oriented newsletter, I review and have access to a lot of training materials, but "Essentials" is the one I refer to the most for current, reliable information.

good description of science of omega fats.......2007-08-05
First-rate science writing. I had some very high-level understanding of omega fats when I started the book (I knew the main acronyms, and the importance of omega-3-to-omega-6 dietary balance) but by the end I had a much better feeling for the omega fat family trees, their function, impact on health, plus there is a truly fascinating speculative chapter on why omega-3 and omega-6 have different effects in the body. It's written from the historical point of view, which I think is a fine approach generally - one touches the main ideas again and again which is helpful for understanding, but it's in the context of the historical story so it doesn't seem like pointless repetition. One small criticism is that the author seems to have wanted to keep the presentation as an 'essay for the interested layman' and to avoid it looking like a biochemistry textbook. But the chapter on membranes was just one place that could have benefited from figures. And there are warnings about saturated fat which will surely be of interest to anyone who is a reader of this book, but the background info is way too terse to justify the statements made (so Finland reduced saturated fat and heart disease went down - that alone is no basis for the conclusion that 'saturated fat is bad').
In summary, a great book if you want the science of omega fatty acids. If you just want dietary advice, don't buy this - get Simopoulos's Omega Diet or Michael Schmidt's book instead.

An excellent history on fats in the western diet and some simple helpful tips on how to eat healthier.
Balancing Omega 3 and Omega 6 fatty acids In Your Body.......2007-01-11
The book does an excellent job of pulling together the results of many years of research studies into the effect of diet on the health and physical well being of peoples from around the world. It points out the importance of balance for the various fatty acids and steps one may take to work toward this balance; i.e., dietary actions to take and avoid. It is heavy on the chemistry involved, but persons not interested in the chemical details can still learn a lot. My belief is the author has great credibility. I have changed my diet aimed at balancing the omega 3s and omega 6s.

I heard her interviewed and immediately ordered the book and then I couldn't put it down. I'm a voracious reader, a biochemist and a mom (i.e. family food director). All I can say is OHMAHGAWD. I have ABSOLUTELY no idea how non-chemists perceive this book, but I have now seen the light and I will be eating lower on the food chain, but not so low as the seeds! LAurie

I'm learning Norwegian and this is the most useful book I've consulted. There are people who need examples to understand things. I don't. That's why this book is the perfect guide for me and people with a system similar to mine. The theoretical explanations are both deep and plain, there are only a few essential examples and, above all, there are no pictures in it!
Another detail that I've loved of this book is that it revises basic grasps of general grammar, for those who don't remember what a deponent verb or a predicative object is.
If you want to have a solid basis of Norwegian, you can trust this book.

Let me start by saying I came from a beginning Norwegian language class where the textbook was entirely in Norwegian; the index, instructions, EVERYthing. Does that make sense to speak a language to someone who doesn't know it and is trying to learn? I understand the theory behind it, but it's just not practical. So naturally I looked for outside help.
I found that help with this book by Janus. He has a great way of laying out, in an easy-to-read-and-follow format, just EXACTLY how something is said and WHY it's said that way.

Each area covers every aspect of formal and informal grammar starting with a paragraph or two about what a given funtion or part of speech means (ex: The present participle are adjective forms based on verbs such as the "ing" in thinking)
Then you'll get examples and the book backs EVERYthing up with its English translation right next to them for immediate reference and confirmation.
What struck me about this book was that you don't even have to be a student of the Norwegian language and you could still thumb through it in order to see how Norwegians speak, just out of curiosity. It also has several sections for reference like numbers, a healthy list of verbs and their tenses, and even a section listing the 100 most popular names for males and females. Did you know that Kari is a popular Norwegian name and it's actually pronounced CAHD-ee? Cool.
Book Description
Designed primarily for the non-Food Science major, this textbook presents principles of food science for the nutrition, dietetics, hospitality, and culinary arts student enrolled in an introductory food science course. As in the first edition the book is easily readable. Chapters follow the order of the USDA's Food Guide Pyramid, beginning with foods appearing at the base of the Pyramid - the bread, cereal, rice, and pasta foods, and continuing with foods through the top of the Pyramid - the fatty, oils, and sweets. A chapter on baked products covers batters and doughs, and builds upon information in earlier chapters. The last chapters cover aspects of food production and government regulation.
For this second edition the authors have expanded the concepts relating to material in all chapters, including quality, gums, organic food, irradiation, biotechnology, sugar substitutes, fat replacers, packaging, health claims, and dietary guidelines. There is also a new chapter dedicated to a discussion on emulsification and foams. In addition, the index has been revamped.
As nutrition and food safety continue to be important issues, where applicable, individual chapters contain sections on nutritive value and safety concerns regarding the foods discussed. Additionally, each chapter contains a glossary and helpful references useful for further study.

Excellent guide of over 100 common edible plants.......2006-10-10
I've used more comprehensive guides than this, but I've never seen so much valuable information together in just 66 pages. In my own experience foraging, I've used several other much larger guides, but I had to use several sources to find all the commonly found edible plants that I've seen hiking through Illinois, New York, New Jersey, and Pennsylvania. While other guides devote most of their pages to plants rarely seen, this little book is almost completely filled with edible plants you are likely to see on a short hike. It also gives recommended uses, preparations, and warnings. There is also a small section on commonly found poisonous plants. I have not seen the accompanying video. While I'd recommend reading more verbose guides as well, I've seen no other book that gives so much valuable information in so small of a space.

This second edition has color photos. There are detailed recipes and identification tips. We cover Native American medicine, Chinese medicinal uses and modern pharmaceutical uses. The book is called the basic essentials because there are many edible wild plants out there that are not fit to eat! In this book I focused on plants worthy of your cooking efforts.
The book, unlike others, is organized by how you stumble across wild plants: geographic context. Or, more simply, they are organized in the environment that they are found. Thus, plants in wet areas are treated separately from meadow plants. And plants of the forest have their unique section separate from the seashore and mountianous plants. Yes, we have added plants from the seashore and tidal zones as well as my favorites from mountainous areas...We didn't leave the sunbirds out either. There are several desert edible included.
There is a important section on poisonous plants and poisonous look alikes.
There are more recipes, better recipes and lists of my top ten favorite wild plants and my top ten favorite edible flowers.
With color photos and attention to plants that are quality food (vitamin, mineral and phytochemical content) this new field guide is a great value for under ten dollars.
