This book contains an exceptionally strong coverage of spectroscopy. Proton and carbon NMR are well explained, with detailed tables to predict and justify chemical shifts. IR spec is also well explained. A limited discussion of mass spec is also present. The laboratory exercises are clear in most cases, with a few minor exceptions. Be sure to read the instructions before lab as a few exercises contin ambiguous instructions that become more clear if the entire lab is read first. The number of syntheses is excellent, and many laboratory exercises contain interesting procedures that result in various colored, or common products. As a student of one of the authors, Dr. Douglas F. Taber, I have found this book to be a useful reference for spectroscopy as well as an excellent lab text.

    All food is, of course, made of chemicals, and cooking can be thought of as a series of chemical reactions in which changes occur to some of these chemicals. The aims of cooking are several:

    • to kill microorganisms and denature enzymes that might bring about undesirable changes in food
    • to maintain or enhance the nutritional value of the food
    • to improve the texture of the food
    • to improve the appearance of the food
    • to improve the flavour of the food
    • to improve the aroma of the food.

    The material presented here looks at various aspects of the chemistry of food and the cooking process. It consists of activities of a variety of types — class practical, demonstration experiments, reading comprehension and paper-based activities — at a variety of levels. The index table will allow users to select an activity of an appropriate topic, type and level. Each activity deals with an aspect of the chemistry of food and/or cooking. Although the chemistry of food and cooking is not directly part of most curricula, it can often be used to show familiar chemistry in a context that may be stimulating for many students. The material also allows teachers to reinforce the idea that everything is made of chemicals and that there is no difference between ‘man-made’ and ‘natural’ chemicals. In particular there are a number of activities on which experimental investigations can be based. Some of the paper-based or comprehension activities could be used as revision lessons or in the case of teacher absence.

    The material is presented as teacher’s notes and student worksheets. The worksheets are available on the CDROM accompanying this book or may be downloaded free from the website for this book as colour or black and white pdf files, or as Microsoft® Office Word documents (which can be edited by the teacher if required). Also included on the CDROM and website are video clips related to some of the material. These may be played to start off a lesson or stimulate discussion. However, all the lessons can be tackled without the use of the video clips for those who prefer not to use them. In every case, material is given that the teacher can use to start the lesson by discussion.

    The video clips are taken from the Discovery Channel TV series, Kitchen Chemistry, featuring Heston Blumenthal. Heston is a chef and proprietor of The Fat Duck, a Michelin three-star restaurant in Bray, Berkshire, UK. He is noted for his scientific approach to food and cooking and for the fact that he will not take for granted the accepted wisdom without scientifically investigating it for himself. He also makes use of scientific equipment in the kitchens of the Fat Duck — temperature probes, desiccators and reflux apparatus, for example.

    This is more a review of amazon then the book. I have been trying to order the digital version for close to six months and I am encountering the same idiotic obstacles. Amazon will let me add the digital version to my shopping cart from my wish list. When I get to my shopping cart the book is not there and I get a message telling me to go to the product page for instructions on how to order. Go to the product page and there are no instructions. WTF????? Emailing customer support about the issue and I am told to follow the instructions on the product page. WTF???? So now not only has customer service failed to read my complaint they did not bother to check into my complaint. Why hasn't this situation been addressed?

    4 out of 5 stars An Absolute Essential for Chemists!.......2000-11-18

    As a chemist, I am often in need of techniques for purification of various chemicals. Often time is a constraint and the "best" technique may be too time consuming, if one even knows what it is. This text offers several alternatives to the purificatin of most common compounds (especially solvents), including the best way to make the compound pure as well as other known techniques. One can then choose, based on the reaction one is doing whether one needs to use the best techniques or the fastest technique to get mostly pure material or somewhere inbetween. Unfortunately, often the text does not list the actual percent purity that each technique can yield (though it is often easy enough to guess which methodology will yield the best results.) An invaluable resource for any chemist, but especially for graduate students.

    This is an indispensible resource for any synthetic chemist, either organic or inorganic (not sure about the biochemical section). This book has concise, informative entries on the purification of a vast number of common solvents and reagents. I don't know how any chemist can survive without having this on his/her bookshelf!

    Like Carey & Sundberg, Jerry March, the Aldrich catalog, and the Merck Index, (etc.), this book should be a benchmate for the Organic Chemist. It is very good when one requires the purification of reagents, or the drying/purification of solvents. The protocols for purification are usually pretreatment followed by distillation or recrystallization, and can be carried out to give anywhere from moderately pure material, to giving the pure, pure substance.

    Excellent for the research organic chemistry graduate student or the pharmaceutical industrial research chemist who likes to start with the purest materials, so as to leave only the investigative variables open to question.

    However, in industry, although FedEx-ing new and pure reagents (and disposal of the old questionable ones!) is the easiest and encouraged method for research, it is often found that purification is totally appropriate--in these instances, Purification of Laboratory Chemicals (D.D. Perrin & W.L.F. Armarego) is highly recommended.

    Unfortunately, there aren't really any other atmospheric textbooks out there that covers the vast amount of material which this text covers. The greatest flaw in this book is that it has got to have one of the worst index i have ever seen! It is very difficult searching for certain topics in the book. So unless you are not ready to create your own index for this book, you shouldn't buy the book. Other than that it is a pretty informative book.

    The scope and technical detail of this seminal work covering the cutting edge in Atmospheric chemistry is beyond remarkable. Just the number of references is mind boggling. The book presents the material in a very readable and understandable style. The authors have kept the reader in mind. They also add surprising levity on occasion and show a keen grasp of areas outside chemistry. I know of no other work in this field that is more current, comprehensive, and helpful. If only other scientific works were as thorough and readable.

    Lab work has been a standard part of the study of chemistry since people have been studying chemistry. In fact, it was the practical experimentation that led to the learning that is written in the texts and taught in lectures. The experiments that chemistry students execute are not designed to discover presently unknown aspects of chemistry. It is essential that students be given clearly defined procedures that elucidate specific points that are related to the text they are studying in lecture. The purpose of lab work is to give the student a visceral connection to the material, to see in reality what they are reading about, and to develop their technique in working with precision, in detail, and in making correct and relevant observations.

    This book provides 43 experiments that relate well to the 25 chapters of the main textbook. Each experiment lists clearly everything that will be needed for the experiment, discusses the point of the experiment and what is going to transpire during its execution, the exact procedure to be followed, the questions that need to be answered for the report (these are observations, calculations, deductions, equations, and so forth), pre-lab questions, and relevant diagrams. There are also appendices of useful information that will be needed during the experiments.

    These experiments have been tested and tried and are geared to minimize the work of the instructor in refitting the lab when adopting the text and lab experiments. Since it is the 10th edition, I would expect that most things will work as expected. But in reality, one should always be prepared for the unexpected and work carefully around chemicals, flame, and other people.

    A sound and interesting text and program of experiments.

    This book is very valuable for those actively engaged in the conduct of experiments, either operational or developmental in nature. It does require someone with a background in statistical methods using analysis of variance. The user needs to have a good understanding of statistical inference. There are many good working models of various analytic procedures provided.

    This book is written for people who already know the theory of statistics and want to do statistic consulting.

    The author begins with the basics of design of experiments: experiment, design and analysis. Then a brief (lovely) review of statistical inference follows; including: Estimation, test of hypothesis, power function and some easy applications.

    In the following chapters almost all statistical methods are presented; among others: single factor experiments, randomized block and latin square, factorial experiments, nested, experiments of two or more factors, 2^f -, 3^f factorials, split plot design, Taguchi, regression and finally miscellaneous topics including covariance analysis, response-surface experimentation and more.

    After each chapter there are problems and answers to odd-numbered problems can be found at the end of the book. Included is a practical summery with all methods presented in one table. Additionally you find a glossary of terms used in statisics, statistical tables and an index.

    The examples in the book are analysed using SAS. Knowing that S-Plus is much easier to handle (and knowing that SAS is frequently used in the industry), this is very useful.

    The mathematics used is easy, but - as mentioned in the preface - the fundamental concepts of statistical inference must be known.

    After using this book for a class, we all agreed that this book was not the best for those of us who are just learning the concepts in analyzing variance. The author tends to assume the basics are "hard-coded" into the students head. Fair enough. His next step, however, is not to discuss the theory/concept. Rather, it is to give an example of what he is talking about, hoping you will grasp the concept. It would very helpful to have the concepts explained and then the examples given. In addition, the notation (subscripts) are not always explained, nor are the formulas obvious/straightforward. Finally, the book has editing problems.

    A better editor and supplementary manuals (step-by-step explanation of concepts and formulas, SPSS instruction, etc.) would be a big help.

    My recommendation would be to find another book from which you will learn statistics.

      I bought this book hoping to learn DOE using Taguchi Methods and apply what I learned to real life problems in my work. It was very helpful. Not only did it help me learn the methods I needed to perform my testing at work but I did it in only 8 days of reading. The book was very easy to read and the examples helped me understand everything I needed to know to apply this method to real situations. A great buy for anyone looking to learn Taguchi Methods.

      The challenge that all research directors and senior scientists face is that virtually all scientists are originally trained to believe that the only proper way to conduct an experiment is to vary only one factor at a time while holding all other variables fixed. This belief, which can be shown mathematically to be totally incorrect, has been a drag on the scientific community for decades, causing experimental science to be much less productive than it should be. In fact, by properly designing experiments in which several factors are varied in a carefully thought out, predetermined pattern, much more information can be obtained with far fewer experiments.

      What Dr. Roy has achieved in his book on experimental design is to clearly explain why this is so and to provide the tools which allows his readers to overcome their ingrained beliefs and adopt a more effective method of designing their own experimental programs.

      Of particular interest is his discussion of experimental design using orthogonal arrays (Chapter 4) for it is in this part of the book that the full power of modern approaches to experimentation become most evident. Here, he illustrates how a set of as few as eight experiments can be used to determine how three presumable independent factors, such as time, temperature and concentration, can be studied to obtain detailed information not only on how each factor individually effects the quality of the final product, but also on the extent to which the factors interact.

      Historically, learning this type of technique for designing experiments has been a daunting task since somewhat tedious mathematically manipulations are required for both the design of the experiment and the analyses of the resulting data. However, included with Dr. Roy's book is complete software which eliminates the need for the experimenter to either manually solve the handful of equations needed to extract the results in useful form, or to develop custom spreadsheets in an attempt to automate the process. The software is easy to use and includes all of the tables and data which are used in the book to illustrate the principles of experimental design. The software is also capable of assisting the experimenter in designing sets of up to eight concurrent experiments, rapidly analyzing the data and generating graphical and tabular presentations which greatly aid in the interpretation of the results.

      This is an extremely useful book which can have a major beneficial effect on the productivity of any laboratory engaged in experimental process research such as crystal growth, chemical synthesis or manufacturing. By allowing the reader to overcome his innate aversion to varying more than one experimental factor at a time, the book makes it possible for the reader to become a much more productive scientist or engineer and become a role model for his coworkers to emulate.

      First, I completely agree with all the good things mentioned in the other reviews, but wish to add the following comments:

      1. The discussion group (usenet) hosted by Dr Roy is fantastic. If by chance you don't "get it" from reading the book, a simple question posted to the usenet frequently gets you an answer, often within a few hours (its a vocal crowd!!). Many times, the author himself responds to usenet questions. And, on at least one instance, after I repeatdly asked my question, he began exchanging emails with me, which then led to some pleasant phone disscussions.

      2. User friendly software and support. See above.

      3. Taguichi is frequently attacked by full blown Design of Experiments statistical types who miss the whole point. I strongly encourage all professionals interested in gauging quality control to try out his books and the free software downloads....

      An excellent book with powerful software and support......

      Dr.Roy's book is amazing. He has covered almost everything you need to know about the Taguchi method - even meticulous things. This book will suite both for beginners as well as for experts. The CD which comes along with this book is very helpful in understanding the concept behind the analysis with more than 50 examples. If at all you are looking for a book about Taguchi design of Experiments - I highly recommend one and all to buy Dr.Roy's book and benefit through his work.
      I started as a beginner and now Iam an expert in Taguchi analysis - and the credit goes to Dr.Roy - he also helps personally in answering your questions.

      This book reminds me of how we've gone a society of educational discovers to one that irrationally sees harm in a simple chemistry set.

      There are experiments that I've heard told and retold, some of which I seriously attributed to exaggeration. For instance, a glass beaker submerged in a liquid that has the same refractive index as glass, rendering the beaker completely invisible. Or, another, volumes of smoke made as if by magic.

      It turns out they're all in here! Don't let the physical size fool you, because this book is chalked full of some of the most amazing and impressive chemistry experiments you've ever seen.

      The problem, however, is that the typical home reader won't be able to get their hands on these chemicals anymore. So while you can read about them, you can't conduct the experiments yourself.

      About the only people who'd get practical benefit out of this book would be college chemistry professors who want to lure students into the profession. This would be an impressive way to do it.

      This book gives lots of chemical demonstration ideas. However, some are entirely too dangerous to do. You must use a lot of common sense when considering doing any of these demonstrations. Some are not safe at all. Mercury and CCl4 are EPA regulated. It's not advisable to put ethanol in your mouth to spit out in front of students... This only demonstrates bad lab techniques. Make sure you do the first experiment in the book outside or in a fume hood. It releases a strong odor and an acid vapor. Definitely not something you want your students breathing!

      Each experiment first explains the "action" or the effect intended to produce. Secondly, necessary elements are listed along with their appropriate quantities. Thirdly, a very fortunate addendum to each experiment explains why the reaction occurred and how it did. Finally, most experiements are augmented by a primitive diagram, whose descriptive efforts vary according the action(s) of the chemist, but nevertheless aid the reader with some significance to visualize where certain items should be oriented.
      Anyone interested in this book will understand it is not for anarchy or extremely plexiform experiments to uncover the human genome. Mad scientists, this book is unfortunately not for you, but anyone intrigued by paradoxical chemical experiments, such as fire submerged in water, a burning bush that is not consumed by its flames, and other such fascinating elements, will be pleased with its contents.
      These experiments usually do not require manifold ingredients so they are ideal for high-school chemistry classes, introductory college chemistry, or entertainment during a meal. A waiter who can perform such legerdemain at events will not remain a waiter long, and those of you who are addicted to gambling and teasing friends certain things are impossible will immediately recognize the value of this book.
      I have rated this book 4-star primarily because the majority of the experiments are prosaic or have no genuine purpose to belong the the publishment. However, those experiments that really are "chemical magic" scintillate like stars amid the black heavens, illuminating their observers and imparting them joy at a further comprehension of experimental chemistry.

      This text is a lot of fun, a rapid-fire compilation of visually interesting experiments. *However* it is out-of-date on safety. Despite a recent revision the text appears unaware of the great danger posed by materials such as carbon tetrachloride (a chemical which has since the 60's been all but banned), mercury, benzene, phosphorous, thermite, etc. To say "be careful" is not enough when talking to a lay audience. Please be cautious, the experiments may sound thrilling but the harm can be nasty and permanent.

      This is truly a great and extremely fun book, especially for the curious kid or adult who wants to do exciting stuff with chemicals and glassware. I did every experiment in this book as a kid, some dozens of times, but recommend adult supervision for some of the experiments. In today's dummied down, Lawyer stiffled society it's nice to know that there are actually still books around that have experiments that are as fun as they are politically incorrect. All kids should be exposed to the fun of making fireworks, playing with mineral acids and white phosphorus, oxidizers, and burning metals if they can find the materials and if they have appropriate supervision. It's the real way to become introduced to non watered-down chemistry; this book has the really FUN experiments that will, unlike almost all of the prevailing experimemts in the prevailing contemporary books, keep kids from thinking that science is a complete bore.
